Makes 2 Trays
-2 medium-sized russet potato chips
-1.5 tbsp grapeseed or avocado oil (they have a higher smoke point than olive oil)
-6 tbsp grated parm
Seasoned Panko Bread Crumbs
1/2 cup panko bread crumbs
1/4 tsp salt
1/2 tsp garlic powder (NOT GARLIC SALTT)
1/2 tsp onion powder
2 tbsp parsley flakes
2 tbsp olive oil
3 tbsp grated parm
-Preheat oven to 425F
-Rinse potatoes really well and pat dry.
-Set mandolin to lowest setting and slice thin.
-Transfer potatoes to a bowl and drizzle with olive oil
-Grab a baking sheet and sprinkle 1/2 the grated parm. Note: I used a silicon mat, but It’s not necessary.
-Layer the potatoes over the grated parm, overlapping slightly.
-Top with grated parm and breadcrumb mixture (recipe below).
-Bake for 12-15 minutes and broil for 1 to 2 minutes or until crispy on the edges.
