Easy pickled onions:
1 red onion, thinly sliced
3/4 cup apple cider vinegar
1/4 cup water
1 teaspoon salt
1–2 tablespoons sugar
Add sliced onions to a mason jar. Combine all other ingredients and whisk in a small pot over medium-high heat until it simmers. Pour hot mixture over red onions, add lid and option to shake to combine well. Let the mix marinade for at least 30 minutes then store in fridge.
