There's something so nostalgic about eating ice cream in a bun 💜 In Malaysia these ice cream sandwiches are sold by uncles on bikes. The creamy ice cream is scooped into soft, fluffy buns that soak up any melty bits. Ask any Malaysian and this sweet treat is probably woven into their childhood memory ✨
I asked you guys what your favourite ice cream flavour was a few weeks ago and so many answered keladi or taro (yam), so here's a recipe I came up with that can be made super easily in the Ninja CREAMi Ice Cream Maker 🍦
Here's the recipe 👇
Vegan Ais Krim Keladi (Taro Ice Cream)
350g keladi or taro (boil for 30 minutes)
375ml barista oatmilk
125ml coconut cream
150g sugar
1/4 tsp salt
1 tsp vanilla
A handful of butterfly pea flowers steeped in 1/3 cup hot water (or sub purple, or red + blue food colouring) with lemon juice.
Method:
*Peel the taro, cut into cubes then boil for 30 minutes. Then drain and rinse thoroughly. 🚨 Taro contains toxic compounds in its raw form, so please make sure it's cook through completely.
*Heat barista oatmilk, coconut cream, sugar and salt on medium. Stir until the sugar dissolves and the milk is steaming.
*Add the butterfly pea water if using or food colouring.
*Turn off the heat, stir in vanilla and pour into a blender along with the cooked taro.
*Blend until super smooth then pour into Ninja CREAMi tubs. Freeze for 24 hours then creamify in the machine using the Ice Cream setting. If the texture is crumbly, creamify with the Respin setting 1 or 2 times.
*Serve on its own or as an ice cream sandwich in a soft fluffy bun.
