These mini waffles have been a recent obsession in my household. We love having them on the weekends as well as making extra to freeze and have throughout the week as a toasted snack!

Equipment:
Mini Waffle Iron
Ingredients:
1 ⅛ cups AP Flour
2 Tbsp Sugar
1½ tsp Baking powder
½ tsp Salt
1 Cup Milk, warmed
¼ Cup Unsalted butter, melted
1 Egg
1 tsp Vanilla extract
Instructions:
- Preheat waffle iron.
- Warm your milk in the microwave for 30 seconds and set aside. Melt your butter in the microwave and set aside.
- Into a medium mixing bowl, add the flour, sugar, baking powder, and salt. Mix and set aside.
- Combine your milk, melted butter, egg and vanilla, in a small mixing bowl, whisking well after each addition.
- Pour your wet ingredients into your dry ingredients and mix until combined.
- Spray down your waffle iron with cooking spray and add 1/4 cup of batter for each waffle. I use a single serving waffle iron so this is the right ratio for my set up, but feel free to adjust based on the size of your iron.
- Cook until golden brown, about 3-4 minutes. Place on a wire rack until ready to serve. Note: this ensures they stay crisp!
- Serve with maple syrup and butter or just enjoy them on their own!
