Ingredients: 2 cups thick poha (flattened rice) 2 tbsp oil 1 tsp mustard seeds 1 tsp cumin seeds 1-2 green chilies (slit or finely chopped) 1 sprig curry leaves 1/4 tsp turmeric powder Juice of 1 lemon 2 tbsp roasted peanuts or cashews Salt to taste 2 tbsp chopped coriander leaves (for garnish) Instructions: 1. Prepare the Poha: Rinse the poha in a colander under running water until softened but not mushy. Let it drain completely. 2. Temper the Spices 3. Cook the Poha 4. Add Lemon and Finish Enjoy the tangy and savory goodness of Poha Lemon Rice!
