Learn how to make Lauki (Bottle Gourd) Halwa Recipe by Manjula.
Ingredients
2 cups lauki peeled and shredded, before shredding removes the seeds (bottle gourd, doodhi, ghia, opo squash)
2-1/2 cups milk
2 tablespoons ghee, or clarified butter
1/2 cup sugar
1/2 teaspoon coarsely ground cardamom seeds
2 tablespoons pistachio chopped
Instructions:
-Squeeze water from shredded lauki until you have 2 cups packed. Set it aside.
-Boil milk in a heavy-bottomed pan over medium-high heat until reduced to about 1-1/2 cups. Set it aside.
-Melt ghee in a frying pan over medium heat, then add lauki and sauté for 3 minutes until tender but not mushy.
-Add milk to the lauki, mix well, and bring to a boil. Reduce heat to low and cook until thickened, about 10 minutes. Stir occasionally to prevent sticking.
-Add sugar, cardamom, and half of the pistachios. Stir continuously and cook until the mixture reaches the consistency of soft sticky dough, about 3-4 minutes. Turn off the heat.
-Transfer the delicious lauki halwa to a serving bowl, garnish with remaining pistachios, and serve hot or at room temperature.
