Ingredients
* 4 medium eggs
* 1 medium egg yolk
* 1 cup avocado oil
* 1 teaspoon freshly squeezed lemon juice
* 1 teaspoon vanilla extract
* 3 cups finely grated carrots lightly packed
For Dry Ingredients:
* 2 cups all purpose flour sifted
* 1 3/4 cups granulated sugar
* 2 teaspoons baking powder
* 1/2 teaspoon baking soda
* 1 1/4 teaspoon ground cinnamon
* 3/4 teaspoon ground cardamom
* 3/4 teaspoon salt
Other Ingredients:
* butter and flour to prepare the bundt pan
