INGREDIENTS
3 very ripe medium bananas
3 eggs
3 cups organic spinach
3 tablespoons honey
1 teaspoon vanilla
2 cups packed chocolate protein powder
1/2 cup unsweetened cocoa powder
1/2 cup rolled oats
3 tablespoons chia seeds
1 teaspoon baking soda
1/2 teaspoon sea salt
2 tbsp (more as needed) milk of choice
dark chocolate chips (optional)
INSTRUCTIONS
Preheat the oven to 350°F. Line a muffin tin with muffin liners.
Add the bananas, eggs, honey, vanilla and spinach to a blender and blend until smooth.
To a medium bowl, add the protein powder, cocoa powder, oats, chia seeds, baking soda and salt and stir together. Add milk as needed. Stir in chocolate chips if desired.
Pour batter into prepared muffin liners. Bake for 15-20 mins or until the tester comes out clean. Enjoy!
