I got the process right this type and wanted to share this method. Such an easy and delicious ramen topping if you have a sous vide machine!
Sous Vide Chashu
Weight chicken in grams and then add some amount in water
1% sugar * (total weight of water & chicken)
1.5%tbsp salt * (total weight of water & chicken)
1 tbsp soy sauce
1 tbsp mirin
