Here’s how I core cabbage, cutting the core out before I slice through the whole. Cabbage are so big! So it’s easier to manage them once the core is out and the giant is cut in half. That core is pretty dense, so it can be a chore to cut down through it, so that’s one reason why I cut it out first. The other reason is, when making our stuffed cabbage we work with the whole cabbage head and need all of those leaves intact before we poach, soften, and remove them for rolling.
