Sausagefest ‘24 In this fifth video (of 5), we look at smoking the sausages. Once your sausages are stuffed and have dried, they are ready to be smoked. Using a smoker or pellet grill set to 125-150 (but not higher than 150), smoke the sausages for 3-4 hours. Remember- you are not “cooking” your sausages. You are smoking them. So you want to keep the temps lower. Once they are fully smoked, take them off the smoker and give them an ice bath to stop the cooking, and clean off any soot from your grill. Now you can freeze them for another day, or throw them on the grill at 350 degrees until they hit 165 internally. At this point they’ll be plump and snappy! Enjoy!
