3-4 large russets
Deep fry at 350F for 8-10 minutes until lightly golden and tender
1 Tbsp oil
1/4 cup tomato paste
4 cloves garlic
1 Tbsp chili flakes
2 tsp cayenne or Cajun
Salt to taste
Finish with lemon zest and juice, and 1/4 cup chopped cilantro!
