Day 3 of Tomato Week! 🍅 I love eating soup all year long, and this Tomato Gazpacho is perfect for the summertime. It’s only takes 15 minutes to make, but I like to keep it in the fridge for a few hours to allow the flavors to marinate. You can make it smooth like I did, or you don’t have to strain it if you prefer a chunky soup. Be careful not to over-blend it, though, otherwise it can become thin and watery.
