Jess whipped up some delicious Smashed Falafel Wraps today, packed with fresh herbs, warm spices, and a creamy tahini sauce. It was a quick and satisfying recipe that’s perfect for lunch or dinner. Recipe courtesy of @dr.vegan—definitely one to save and try! Smashed Falafel Wraps: Ingredients Falafel Mixture 1 can chickpeas, drained and rinsed 1 tsp ground cumin 1 tsp ground coriander 1 tsp cinnamon Salt and pepper to taste 1 handful fresh parsley 1 handful fresh cilantro Tahini Sauce (Mix the following in a blender) ½ cup tahini 2 garlic cloves Juice from ½ lemon 1/3 cup water Dash of salt Optional Toppings Diced pickles Thinly sliced tomatoes Thinly sliced onions Chopped fresh parsley Directions 1. Add the chickpeas, cumin, coriander, cinnamon, salt, and pepper to a food processor. Pulse until the ingredients are well combined. If the mixture is too crumbly, add a few teaspoons of water to make it spreadable. 2. Spread the falafel mixture on one side of a pita bread. Preheat your griddle and lightly coat it with oil. Place the pita bread falafel-side down on the griddle. Cook for about 5 minutes, then flip and cook the other side for an additional 1-2 minutes. 3. Remove the pita from the griddle. Top the falafel side with diced pickles, tomatoes, onions, and a drizzle of tahini sauce. Sprinkle with chopped parsley for added flavor. 4. Roll the pita into a wrap, slice it in half, and enjoy your freshly made falafel wraps!
