Green Eggs & Ham?!?! Turns out it's not just one of my Favorite Dr.Seuss books, but also makes for a Deeelicous Breakfast!!
Ingredients :
4 Eggs, scrambled
6-8 slices of ham
1 Italian Bread
2 TBSP Pesto
EVOO
Salt and pepper to taste
Grated Parmesan
Instructions :
1. Scramble eggs with EVOO or Butter
2. While still soft, add 2 TBSP of pesto and remove from heat.
3. Mix well, season with salt and pepper
4. Serve with griddled ham and toasted bread.
5. Finish with shaved parmesan cheese.
