In this video, we'll show you how to make Filipino chicken sopas from start to finish. This soup is perfect for cold winter nights and will fill you up and warm you up at the same time. Use my code GERONIMO to get A FREE GRINDER OF ROBUSTA BLACK PEPPERCORNS With Any Order Of $15 Or More at *INGREDIENTS* - *Chicken thighs*, skinless and boneless – 500 grams (1.1 lbs) - *Avocado oil* – as needed - *Garlic*, minced – 4 cloves - *Onion*, diced – 1 medium - *Chickpea elbow pasta* – 1 cup (200 grams) - *Bok choy*, chopped – 2 cups (150 grams) - *Carrots*, diced – 1 large (about 1 cup or 130 grams) - *Chicken broth* – 6 cups (1.4 liters) - *Coconut milk* – 1 cup (240 ml) - *Prosciutto*, thinly sliced – 100 grams (3.5 oz) - Kosher *salt* – to taste - *Ground black pepper* – to taste - *Green onions*, chopped – for garnish - *Lemon or calamansi juice* – optional, for serving *INSTRUCTIONS* 1. *Sear Chicken*: Heat a large pot over medium-high heat and add avocado oil. Season the chicken thighs with salt and pepper. Sear them on both sides until golden brown, about 5-7 minutes per side. Remove from the pot and set aside. 2. *Cook Prosciutto*: In the same pot, cook the prosciutto until crispy. Remove and set aside, leaving any rendered fat in the pot. 3. *Sauté Aromatics*, Reduce the heat to medium. Add more avocado oil if needed. Sauté garlic and onion until the onion becomes translucent. 4. *Deglaze and Add Vegetables*: Pour a bit of the broth into the pot, scraping up any browned bits. Add the diced carrots and chopped bok choy. Cook until they begin to soften. 5. *Add Broth and Pasta*: Pour in the remaining chicken broth and bring to a simmer. Add the chickpea elbow pasta and cook until al dente, following the package instructions. 6. *Return Chicken to Simmer*: Add the seared chicken thighs back into the pot. Let them simmer until fully cooked and tender, about 10-15 minutes. 7. *Shred Chicken*: Remove the chicken thighs from the pot, shred them, and then return the shredded chicken to the pot. 8. *Add Prosciutto and Coconut Milk*: Add the crispy prosciutto. Stir in the coconut milk and heat through without boiling.
