Mexican adobo sauce is a rich, smoky, and slightly sweet sauce made with dried chilies, vinegar, garlic, oregano, and other spices. It's used to marinate meats, poultry, and fish, or as a flavoring for soups, stews, and rice dishes. Ingredients: 6 guajillo chilies 3 ancho chilies 4 pasilla chilies ½ cup white vinegar 3 garlic cloves (peeled) 1 teaspoon black peppercorns ½ teaspoon cumin seeds 2 teaspoons dry oregano 3 bay leaves 1 teaspoon table salt Notes: You can also use a few chipotle en adobo sauce or dried chipotles for extra flavor. Preparation: Remove the stem, veins, and seeds from chilies. Heat a comal or a cast iron skillet over medium-low heat and lightly toast them on both sides. Add chilies to a large bowl and cover them with hot water. Let them soak for about 15 minutes. Place all ingredients in a blender (including soaked chilies) and blend for 3-4 minutes or until you'll have a velvety sauce.
