Cheesecake:
-3(8 oz.) packs cream cheese(room temp)
-1 cup packed light brown sugar
-5 large eggs(room temperature)
-1 teaspoon vanilla extract
-1 teaspoon cheesecake flavoring
Bake at 300° F for 70-80 minutes
Oreo Crust:
3 cups chocolate cookie crumbs
7.5 tablespoons melted butter
Bake at 375°F for 7 minutes
Caramel Pecan Topping:
(8 oz.)Werthers soft caramels pieces
Water
1 cup Finely Chopped Toasted Pecans
Heat soft caramels with water in microwave (30 second intervals) and stir. Add 1 teaspoon of water at a time until it reaches a syrup like consistency.
Toast pecans for 10 minutes at 350° F
Dark chocolate ganache:
1/3 cup semi sweet chocolate chips
3 tablespoons heavy cream
Mini chocolate chips for garnish.
