2 cups cottage cheese
1 cup shredded tex mex cheese
1 tsp taco seasoning
¼ cup pickled jalapenos, drained and diced (optional)
Garnish options: pico de gallo or diced tomato, red onion, cilantro
To serve: Tortilla chips, crackers, vegetables
To a blender, add the cottage cheese, cheese, and taco seasoning and blend until smooth. Stir in the jalapenos if using.
Pour into a microwave safe dish and microwave covered on high in 30 second increments, stirring in between, until heated through. Alternatively, pour mixture into a small pot and bring to a simmer over medium heat. Cook until heated through, stirring frequently so it doesn’t burn, approximately 3-5 minutes.
Transfer to a serving dish and top with more cheese and garnishes if desired. Enjoy warm with tortilla chips, crackers or vegetables.
Hot tip: Add a tablespoon of nutritional yeast for an extra dose of B12 and zesty flavor.
