We recommend to peel the limes into a resealable container. Put the peeled limes to the side for later use. Weigh the lime peels. Calculate 80% (or .80) of the weight of the peels, then add that amount of Citric Acid to the peels. Calculate 20% (or .20) of the weight of the peels, then add that amount of Malic Acid to the peels/citric acid mixture. Seal the container and shake/mix the peels and acids to ensure the peels are fully coated in the acids. Set this mixture aside for 2 hours or until all of the acids are dissolved and a lot of oils have been pulled out of the lime peels. After the 2 hours, combine the peels/acid mixture with the juice from all of the limes that were peeled earlier. Calculate 15 times the weight of the original lime peels; for example we originally had 40 grams of lime peels and 40x15=600; then add that amount of water to the mixture. Use an immersion or traditional blender to blend the peels, acids, juice, and water together. Once well blended, strain the mixture through a nut milk bag or a fine mesh strainer. Bottle it up (and label/date it) and you have ready to use lime juice for your beverages or even to cook with! It's low waste too! Keep your super juice refrigerated and it keeps fresh for about 2 weeks.
