One of my favourite fruits to dry - so delicious. You can make it from fresh, canned or frozen pineapple. Detailed instructions for the dehydrator here. You can use the oven - just be prepared to have it in use for a while. Place pieces on parchment or silicone lined baking sheet. Dry in 175° F oven for 8 hours flipping pineapple every couple of hours. I love eating as is, adding to trail mix and using in various shelf stable camping meals like my homemade instant oatmeal mix.
