This simple trout, asparagus, and red bell pepper sheet pan recipe is perfect for a delicious and healthy weeknight dinner.
Ingredients:
4 Omaha Steak Steelhead Trout Fillets, thawed
3 tablespoons extra virgin olive oil
2 tablespoons lemon juice
2 cloves of garlic, minced
1 teaspoon dried oregano
1 teaspoon lemon zest
Salt & pepper, to taste
1 lbs asparagus, trimmed
1 red bell pepper, thinly sliced
4 lemon slices
Steamed rice, for serving
Directions:
1. Preheat the oven to 375°F.
2. Whisk together olive oil, lemon juice, garlic, oregano, lemon zest, salt, and pepper until well combined.
3. Add asparagus and bell pepper to a sheet pan. Toss with half the marinade. Add the trout. Drizzle with remaining marinade and place a lemon slice on each filet.
4. Bake for 12 to 15 minutes, until trout is cooked throughout. Serve over steamed rice.
