This is my take on the popular Mississippi Chuck Roast using a pressure cooker.
Ingredients:
3-5 lbs of chuck roast
1 jar of whole pepperoncinis
1 stick of butter
1 yellow onion
2 cloves of garlic
1 ranch packet
1 au jus packet
1 cup of beef broth/stock
1 tbsp avocado or olive oil
Start by large dicing a yellow onion. Unwrap two garlic cloves. Slice the chuck roast into a few large chunks. Using the saute feature in your pressure cooker, add a little olive oil and fry until the outside is browned then remove. Throw in the diced onion and saute for a few minutes. Then put in the garlic cloves, one cup of beef stock or broth, an entire jar of pepperoncinis, juice and all. Then put the chuck roast back in. Add one packet of Au Jus, one packet of Hidden Valley ranch mix, and a whole stick of unsalted butter. Give it all a quick stir then set your pressure cooker to high for one hour. This comes out so good guys, just as tender as can be. This is a super simple meal you can prepare on a weeknight.
