Taroi ki Sabzi or Ridge Gourd is a staple in our household. I love its simple taste and I enjoy eating it hot with rice. This is my favourite comfort food. The preparation is quite simple and gets ready in 15 minutes. INGREDIENTS Ridge Gourd - 1 kg Mustard Oil - 2 tbsp Mustard seeds - 1/2 tsp Curry leaves - 1 sprig Garlic - 10 (finely chopped) Ginger - 1 inch (grated) Green chillies - 2 Onion - 1 (finely chopped) Diced Turai Salt - 1 tsp Red chilli powder - 1/2 tsp Turmeric - 1/2 tsp Garam Masala - 1/4 tsp Black pepper - 1/4 tsp Hing (Asafoetida) - a pinch Tomatoes - 2 (chopped) Coriander - to Garnish RECIPE 1. Peel, wash and Cut the ridge gourd (Turai) into cubes. 2. In a wok, heat some mustard oil. 3. Add mustard seeds and curry leaves and let it splutter. 4. Add Garlic, Green chillies and Onion and Saute until onion is golden. 5. Then add the diced Ridge Gourd and cook in medium flame for 5 minutes. 6. It will release all it's juices. 7. Then add all the spices. 8. Then add Tomatoes and cook for 5 more minutes. 9. Lastly, garnish with Coriander. 10. Serve hot with rice and roti. Enjoy!
