Ingredients 1 jar Roasted red peppers 1 whole focaccia 3 Tbsp mayo 4 oz salami 5 oz mortadella ½ lb fresh mozzarella cheese, sliced Baby arugula Pesto ½ cup pine nuts, toasted in a pan ⅓ cup parmesan cheese, cubed 1 bunch of basil 2 cloves garlic ½ tsp salt ⅓ - ½ cup olive oil To start, make the pesto. In a food processor add the pine nuts, parmesan cheese, basil, garlic, salt and olive oil. Blend well and add more oil if needed. Cut the focaccia in half. Assemble the sandwich with mayo, peppers, salami, mortadella, mozzarella cheese, pesto and arugula. Slice and enjoy!
