In this video, we're making Tian Provençal, a dish similar to Ratatouille but more of a stew. This dish is perfect for a family cooking day, and today was extra special because my teenage son asked if he could help make this week's recipe video. He did a great job chopping and dicing the veggies and herbs, making this dish a true family effort. The ingredients for Tian Provençal include sautéed onions and garlic, tomatoes, thyme, crushed red pepper, eggplant, zucchini, and sometimes even lavender for a unique flavor. We covered ours loosely and placed it in the Fontana oven, which turned out to be a great decision as we had so many chopped veggies left over that we made a second batch.
