Full Recipe: 2 lbs catfish 2 cups buttermilk - Soak 1 hr ----- Cornmeal Breading: 1 cup cornmeal,fine 1/2 cup ap flour 1 tsp each of: paprika, chili powder, salt, black pepper - Blend all ing, set aside ------- Remoulade: 1/2 cup mayo 2 Tbsp cornichon, minced 1 Tbsp wholegrain mustard 1 tsp garlic, minced 1/4 tsp turmeric 1/4 tsp chili Flake TT salt & pepper - Blend all ingredients, set aside ----- Fryer setup: 5 qt dutch oven pot 1 inch deep of sunflower oil - Heated to 360° ------ Cooking Method: preheat oven 250° - Bread fillets thoroughly - Cook the thickest pieces first. -Set in heated pot of oil. Fry 5 min, on each side, for thick cuts. 4 min for thin cuts. - Transfer to sheet pan and keep warm in heated oven until ready to serve with vinegar coleslaw and remoulade sauce.
