The chicken chashu (Japanese braised chicken) is filled with umami, great on its own or on top of ramen! Easier & healthier than the pork version, but just as delicious! [Ingredients] 2 chicken breasts Lots of salt [Broth Ingredients] 1000ml water 250ml soy sauce 100ml mirin 100ml sake 30g sugar 4 cloves crushed garlic 30g sliced ginger Teared up negi (the green part) [Negi Shio Sauce Ingredients (Optional)] 2 tsp oyster sauce 1 tsp lemon juice 1 tbsp soy sauce 2.5 tbsp sesame oil 1/2 tsp honey 1/2 tsp salt/pepper/ajinomoto 1. Tenderize both sides of chicken with a fork, cover & rub a lot of salt, leave it for 30 minutes in room temperature. 2. Make the broth by mixing all of the above and brining it to a boil, then drastically lower the heat. 3. Put in the chicken and lightly simmer for 15 minutes with lid off. 4. Turn heat off, put on lid, leave it for 15 more minutes. 5. Meanwhile make the optional negi shio sauce. 6. Take chicken out, cut it up. 7. Heat up sauce, pour onto plate along with chicken & negi sauce. Enjoy! #recipe #cooking #japanesefood
