i'm not kidding when i tell you, this ✨Garlic & Herb Crusted Rack of Lamb✨ is the easiest holiday dinner i've ever made: gorgeous, juicy, & ready in 20 minutes! plus, you can grab everything you need to make it at Fresh Thyme (order pick-up for the win! 🙌🏼)—i love 'em for their ✨real fresh food✨ at ✨real affordable prices✨, but i love 'em even more for their commitment to community & giving back to those in need. holiday spirit in action. ❤️ GARLIC & HERB CRUSTED RACK OF LAMB 1 ½ lb Thomas Farms Rack of Lamb 1-2 tsp kosher salt ½-1 tsp black pepper 5 cloves garlic 2 sprigs fresh rosemary 2 sprigs fresh thyme ¼ C olive oil 1 hour before roasting, place rack of lamb on baking sheet & season with salt & pepper. Set aside. Meanwhile, combine garlic, rosemary, thyme, & olive oil in food processor. Blend until mixture forms a thick paste. Rub paste all over seasoned rack of lamb. Roast at 425 degrees F for 20 minutes, flipping halfway through or until the internal temperature has reached 135 degrees F. Rest for 10 minutes before carving & serving.
