This is a full top blade roast and it's whats for dinner. This is a very rare roast to find because of the tough fascia that runs through the middle. If you remove the fascia you'd get what is commonly known as FLATIRON steak. Anyway, yes you have to cut around tough part in the middle as it gets thicker towards the larger side its harder to chew. Either way it was incredibly flavorful and would buy this again no doubt. thanks for watching!
