For the sauce:
-2 tbsp soy sauce
-1/4 cup chicken stock
-1 tbsp cornstarch
-1 tsp sugar
-1 garlic, chopped
-1 tsp ginger
-1/2 tsp chili flakes
For the chicken:
-2 boneless chicken thighs, cut into pieces
-1/4 a red pepper, diced large
-1/2 a zucchini, diced
-1 tbsp toasted peanuts , chopped
Add the sauce ingredients into an Anyday dish, cover with the lid and cook in the microwave for 1-2 minutes or until thick. Stir well to ensure the bottom is well incorporated, add the chicken and veggies, then cook covered in the microwave for 3-4 minutes (or until chicken is fully cooked). Add the peanuts and stir to combine, then serve hot with rice and/or steamed veggies.
