Knefeh or Kunafa is a middle eastern dessert that just about everyone loves. This is a personal sized version that is pretty simple to make and will have everyone begging for more. I’m sure everyone has many different ways to make the cream filling. This a simple 3 ingredient way to get great results.

1/2 package of Kadaif (chopped up)
2oz butter (melted)

Cream filling
1 cup half and half
1Tb cornstarch
1Tb sugar

Syrup
1/2 cup water
1/2 cup sugar
1 tsp rose water or orange blossom
.
Combine shredded kadaif and melted butter. In a pot over medium heat whisk cream filling ingredients and bring to a simmer to thicken. Nice thick remove from heat and cool completely.
Combine all syrup ingredients in pot and bring to a simmer. Cook just until syrup dissolves.

Pre heat oven to 375F. In a cupcake tin spread a little butter in the insides of the molds. add a couple tablespoons of Buttered kadaif and press down firmly (use the bottom of a cup to help make it flat) top with 1-2 TB of cream and top that with more kadaif pressing down gently. Repeat with remaining molds.
Cook in preheated oven for 30-35 min or until golden brown. Remove from oven and top with a few tablespoons of syrup around the edges. Let it cool slightly and enjoy with a little more syrup and garnished with pistachios.
