Demerara Syrup is a great substitute for simple syrup when using dark liquors. It adds a richer flavours and deeper darker notes that pair well with alcohols such as whisky, rum and brandy. It has a Molasses flavour profile and is quite sweet.
This version is what we call a RICH syrup, meaning there is twice the amount of sugar as there is water.
Rich Demerara Syrup:
1 part water.
2 parts Demerara (brown) sugar.
Simmer until sugars are dissolved.
Chill, Bottle, Refrigerate.
For REGULAR Demerara syrup, follow steps above but use:
1 part sugar
1 part water.
This will result in a thinner and less rich syrup.
