These stuffed zucchini are similar to how we made then when I was growing up in Albania. We called them ‘kunguj të mbushur’.
Usually the light green zucchini is not very common where I live now so I had to make my recipe and adapted it a little bit to fit the quantity of zucchinis I bought.
