Bacon Jam Recipe:
1. Slice up 1/2lb of bacon, cook until it starts to crisp up then remove bacon and leave 1 tbsp bacon fat and sauté 1/2 onion and 3 cloves of garlic for about 5 mins.
2. Add bacon back in, 1/4 cup apple cider vinegar, 1/4 cup maple syrup, 1/4 cup brown sugar, 2oz bourbon and cook for about 5 mins over med heat until it thickens
3. Bone marrow: Smoke for about 25mins until it starts to bubble
4. Grill the burger over direct coals, flip after 4 mins then add cheese. Assemble burger on a toasted brioche bun with Mayo, bacon jam, smoked bone marrow
