A truly nostalgic meal for me is sardines in tomato sauce with rice or toasted baguette. Growing up my mom prepared this and would share stories of how she often ate it during her time spent at the refugee camp in the Philippines and Malaysia while she was on her journey to America.

Serves 1
Ingredients:
1 can (4.4 oz) Wild Planet Wild Sardines in Extra Virgin Olive Oil
⅛ onion sliced
1 green onion chopped
½ cup tomato sauce
1-2 tbsp water
1 ½ cups cooked rice
1 tsp soy sauce (adjust to taste)
Black pepper
Instructions:
In a pan/skillet, heat up about 1 tbsp of the extra virgin olive oil from the sardines can.
Add in the sliced onions and cook till they soften and caramelise.
Add in the sardines, tomato sauce and water then cook for a few minutes till the sauce thickens.
Crack some fresh black pepper to taste.
Serve the sardines in tomato sauce over rice, garnish with green onions and season to taste with soy sauce.
