It's easy to toast nuts in a pan – and saves you heating up the oven. To a cold pan, add 1 tbsp of olive oil (which is optional but really helps with even heat distribution and browning) and your nuts. Turn the heat onto medium, and swirl or stir the nuts. Be careful with the heat – you want them brown all the way through, not just on the outside – low and slow is your friend. For small nuts, like pine nuts or pistachios, cook for 3-5 minutes. For large nuts, like almonds, pecans, or walnuts, cook for 8-10 minutes. You'll know they're done when your kitchen smells delightfully nutty and they are golden brown on the outside. Remove them to a bowl to stop the cooking process.
