180g ground turkey or beef (95/5)
300g potatoes
100g onions
8g oil
Salt, black pepper
Seasonings of your choice. I added garlic powder, cayenne pepper to the meat, and rosemary to the potatoes.
Cheese sauce:
20g cheddar cheese
1g cornstarch
50g evaporated milk
Burger sauce:
15g light mayo
15g ketchup, zero added sugar
10g mustard
Some chopped pickles
Peel the potatoes and cut them into country-style wedges. Place them in a pot and cover with water, two pinches of salt, and a little baking soda. Let the potatoes simmer over medium heat for 10 minutes, or until they are soft.
Drain the water and transfer the potatoes to a bowl. Add 2g of oil, black pepper, and rosemary, then shake the bowl vigorously for 30 seconds.
Air-fry the potatoes at 200°C (400°F) for 15–20 minutes, or until golden brown.
Meanwhile, chop the onions. In a small bowl (or glass), combine the burger sauce ingredients. In a separate bowl, combine the cheese sauce ingredients.
Heat 4g of oil in a pan over medium heat and stir-fry the onions with a pinch of salt for 3–4 minutes. Push them to one side of the pan, add 2g of oil, then add the meat. Spread the meat out so it browns properly. Season with salt, black pepper, garlic powder, and cayenne pepper. After one minute, flip the meat and let it cook for one more minute.
Next, combine everything in the pan and break up the meat. Remove the pan from the heat, add the cheese sauce, and allow the residual heat to melt it.
Finally, place the potatoes in a bowl, add the cheesy meat on top, and finish with the burger sauce. Enjoy!
