Cook it to 130°C/275°F. Remove from the heat to cool to 120°C/250°F. Meanwhile prepare the gelatin. Gelatin mixture 50g Gelatin powder 130g Water, cold 40g Guava purée 7g Malic Acid Combine ingredients and melt over water bath, set aside. Stir gelatin mixture into the pan. Pour into moulds and set. If using cornstarch moulds brush off excess cornstarch when set. Sugar Mix 100g Sugar 1g Citric acid Combine and cover gummies that were set in silicone moulds.
